ANTOJITOS ESPECIALES

Antojitos Especiales means "special appetizers" in Spanish. These tasty little treats are perfect for entertaining or as a starter for a mexican meal. Great at cocktail time!

Ingredients
6 Tbsp butter
100g cream cheese
1 cup plain flour
1/2 cup polenta (cornmeal)
a pinch of salt
1 jar SMOKY RED BEAN SALSA
1/2 cup shredded cheese

OPTIONAL GARNISHES:
chopped chillies
sliced black olives
chopped red or green onion
fresh coriander
sour cream

Procedure
Preheat oven to 180c. Cream together butter and cream cheese. Stir together flour, polenta and salt. Add a bit at a time to cream cheese mixture and blend. Knead dough a few times. Lightly oil a muffin tin. Press dough into bottom and up the sides of the tin, to form a cup. Bake for twenty minutes until golden brown. Fill with heated SMOKY RED BEAN SALSA. Sprinkle with shredded cheese and return to the oven allowing cheese to melt. Garnish with any of the optional toppings or serve as is.
