How?s everybody holding up after the holiday break?

Weather here is wet and hot in Goonengerry, but after the really hot and dry of Christmas it?s a welcome change.

Speaking of change, today I realized it was time to talk about the importance of a good breakfast, and how much a bit of chilli can improve it.

Earlier today I was visiting next door with the Greg and Alison, when Alison presented me with a lovely basket full of fresh eggs from their chook pen. Most days I walk up to their house and feed the chickens our fruit and veggie scraps.

Been doing it long enough now that I have gotten to know the girls pretty well. Each has their own personality and temperament.

I was walking home with the eggs and Ginger, our dog, when I realized that in the meantime everyone had cleared out of the house for the day. So, all things being as usual, the first thing I thought of was ?what?s for breakfast??

I heated up a pan, threw in a bit of butter and chopped red onion, let it soften,
tossed in two of the largest eggs in the basket, and stirred it up slightly. My personal preference is not to scramble scrambled eggs too much.

As I write, Ginger is curled up at my feet and there?s a thick morning fog rising over Coorabell below to the east.

On top of the scrambled eggs I placed a couple of small slices of tasty cheese, and a nice swath of Byron Bay Chilli Company, Green Jalapeno Chilli Sauce. I let it cook for a few more seconds so the cheese would melt.

In the old days I might have eaten straight from the pan, but living with Lynne for so many years has left me with this little voice in my head that convinced
me to toast a piece of bread, put it on a plate, and serve the eggs on top.

Yum, the Green Jalapeno Chilli Sauce transformed my breakfast into a gourmet delight. A whiff of sour cream would have been good too, but not
necessary at all.

Ginger got to lick the plate.

The scrambled egg mixture would have been equally good rolled up in a soft flour tortilla, which I would call a breakfast burrito.

You can really put whatever you want inside a breakfast burrito, standard bacon and eggs are great, so long as you don?t forget the chilli sauce.

Any of our chilli sauces or salsas will do, but I would most likely choose the Red Cayenne or the Green Jalapeno. An old farmer friend of mine insists that it must be the Fiery Coconut, which I admit sounds unlikely, but turns out to be really, really good with bacon and eggs.

In conclusion, to wrap it up, Ginger and I will try and make this computer work once again and get this letter off.

But before we go I hope you will always remember these two things: that eating a good breakfast is a great way to start the day, and even an old dog?s breakfast tastes really, really good with a shot of hot sauce from Byron Bay.
