Hello Chilli People!
First the News, and then the recipe...
I hope you watched Food Safari on SBS Wednesday night. How good is Syrian food? Only thing missing was a bit of Byron Bay Chilli sauce on the side.
Next Wednesday, January 28th at 7:30, Food Safari's host, Maeve O'Meara will be visiting Byron Bay and eating fish tacos in our garden in Goonengerry! It was a pleasure to meet her and all the crew a couple of months ago. If you happen to miss it next week, I believe you can view the show online at their website.
Next month, Feb 14th-15th, it's the 10th Annual Hot Sauce and Fiery Foods Festival in Jindivick,
just East of Melbourne, in Gippsland. Horrible Haggis and the Redback Chilli Company promise to make it a memorable weekend. Good food, music, and hot sauce all in one place.
Lynne and I will be there with a tonne of chilli sauce. Hope you will come by and say g'day.
Now for the recipe...
At our home it's salad time. All the extras at Christmas were great, but now it feels right to go light. Night before last we enjoyed a delectable Caesar Salad, with bits of chicken on the side for the meat eaters.
Last night it was one of my all time favourites-
Spicy summer salad that can be served either as a main meal or side dish
Make either with chicken or prawns, or omit for vegetarians
2 cups long grain white rice
2 cubes vegetable or chicken bouillon
4 cups water
2 tsp curry powder
1/2 tsp turmeric
1 cup diced red capsicum (bell pepper)
1 cup sultanas (raisins)
1 cup frozen baby peas
1/2 cup toasted slivered almonds
1/4 cup sour cream or yougurt
1 cup chopped coriander (cilantro)
1/4 cup chopped candied ginger
1/4 cup
FIERY COCONUT CHILLI SAUCE
Optional:
chopped cooked chicken
small prawns (shrimp)
Bring water with bouillon cubes to a boil.
Stir in rice, curry powder and turmeric.
Cover with lid and cook over low heat until done (about 20 mins).
Put the contents into a bowl and refrigerate until chilled. (allow two or three hours)
Mix sour cream/yogurt with
FIERY COCONUT CHILLI SAUCE
(add more or less sauce to suit your heat requirements, I would tend to double this amount).
Stir into the rice along with all the remaining ingredients.
Include chicken or shrimp to suit.
Serve chilled.
Nice on a bed of lettuce leaves with avocado or rockmelon (canteloupe) slices on the side.
