All we are saying... is Give Spice A Chance.

For those of you thinking about heading up to Byron for the East Coast Blues Festival, hope you will stop in and say G?day to Ashif and myself. We will have a tent there, sampling and selling product? but don?t expect to find us there during James Brown?s gig.

Have been to most of the Blues Festivals over the years, and enjoyed many memorable moments. But the best one for me has got to be listening to Elvin Bishop and his band, while the proverbial clouds were parting and a full yellow moon was rising over the bay. (back in the Belongil Fields days).

I know I?m dating myself, but last year?s performance by Arthur Lee was another high point.

Anyhow, back to Holiday Foods.

Good Food is like Good Music. It should be a pleasure to the senses. Here are a few quick riffs for you to consider for this weekend?.

Devilled Eggs w/ Green Jalapeno Chilli Sauce
Spicy little notes to get your party rockin?
Ingredients-
6 hardboiled eggs
? cup minced green onions
3 tablespoons mayonnaise
1 teaspoon Dijon mustard
2 tablespoons Green Jalapeno Chilli Sauce
sliced green cayenne or jalapeno chilli
coriander leaves

Method-
Shell the eggs, cut in half crosswise and remove the yolks. In a small mixing bowl, mash the yolks with the onion, mayonnaise, mustard and chilli sauce. Add salt and pepper to taste. Spoon mixture back into egg whites and garnish with a slice of chilli and a couple coriander leaves.

Corn and Capsicum Nachos w/ Spicy Salsa Picante
An easy appetizer served hot from the oven
Ingredients-
1 tablespoon vegetable oil of your choice
? cup finely chopped red capsicum
1/3 cup finely chopped red onion
? cup corn kernels
250 g cream cheese
? cup sour cream
salt and pepper
230 g bag of Byron Bay Chilli Company Corn Chips
300g jar of Byron Bay Chilli Company Salsa Picante

Method-
Saute the capsicum and onion in hot oil until soft. Add corn and remove from heat. In a mixer or processor, combine cream cheese and sour cream until smooth. Fold in cooked vegetables. Arrange corn chips on a baking sheet, spreading ? tablespoon mixture on each chip. Broil nachos for 2-3 minutes or until cheese starts to melt. Watch out?don?t burn the chips! Remove from the oven, top with a dollop of salsa and serve hot. Makes about 72 appetizers.

Salmon /Cream Cheese Rolls w/ Red Cayenne Chilli Sauce
You can make this appetizer ahead of time
Ingredients-
250g cream cheese
tin of salmon
? small red onion, chopped
1 tsp capers
3 tablespoons Red Cayenne Chilli Sauce w/ Lime
Juice of ? lemon
Salt and cracked pepper to taste
Lavash bread
Cos lettuce

Method-
Mix the first six ingredients in a bowl, and spread on the lavash bread. Sprinkle with salt and pepper. Top with lettuce and tightly roll up. Wrap in cling wrap and put in the fridge to set When ready to serve, slice into bite size pieces and serve on a platter.

Roasted Butternut Squash with Spicy Sweet Chilli Sauce
Good with baked or grilled meats or on its own with rice pilaf and salad.

Ingredients-
1 medium butternut squash
? cup Spicy Sweet Chilli Sauce with Lemongrass
salt and pepper
1 tablespoon olive oil

Method-
Cut the squash in half and remove the seeds. Cut each half lengthwise into 4 pieces. Place in a roasting pan, brush with olive oil and sprinkle with salt and pepper. Bake at 200 for 15 minutes. Remove from oven and brush generously with chilli sauce. Return to oven and bake for an additional 20 minutes or until tender.



Baked Ham w/ Smokin? Mango Chipotle Chilli Sauce Glaze
Mama?s gotta brand new bag
Ingredients-
1 cup Smokin? Mango Chipotle Chilli Sauce (full bottle)
1/3 cup orange marmalade
3 tablespoons Dijon mustard
grated rind of 1 orange
3 good sploshes of bourbon

Method-
Combine all ingredients in a small saucepan. While stirring, bring to a boil. Remove from heat. Trim the skin and all but a thin layer of fat from a cooked ham. Brush with mango glaze to cover and bake at 180 C for 1 ? hours, basting frequently with remaining glaze and pan drippings. Glaze will caramelise?it?s sweet with a nice bite of heat.

Corn Pudding w/ Green Jalapeno Chilli Sauce
Delicious with baked ham or grilled meats.
Ingredients-
1 ? cups creamed corn
? cup corn kernels
1 cup polenta or cornmeal
125 g butter, melted
1 cup buttermilk
3 eggs
? teaspoon baking soda
2 cups shredded tasty cheese
4 sliced green onions
3 green cayenne or jalapeno chillies, deseeded and chopped
150 g Green Jalapeno Chilli Sauce

Method-
Combine all ingredients in a mixing bowl. Pour mixture into a greased medium baking dish. Bake at 180 C for 50 minutes or until done in the centre and lightly browned on top.


Ham Sangers w/ Fiery Coconut Chilli Sauce
Chilli Dude?s favourite
Ingredients-
Sliced ham
White bread
Full egg mayo
Slices of red onion
Shredded lettuce
Fiery Coconut Chilli Sauce

Method-
Make your day-after ham sandwich as usual, spreading a layer of
Fiery Coconut Chilli Sauce much like you would have in the old days
with mustard. The Coconut Chilli Sauce is also very nice the day
before too, just a tablespoon on the side for dipping with the ham.

OKAY...sorry we got carried away. These are all tried and true, just
swallowed one of those devilled eggs as I write. Somebody has to test
these recipes!
