BEAUTIFUL BREAKFAST BURRITO
What a great way to start the day!
Ingredients:
3 eggs
1/4 cup chopped red onion
shredded or sliced cheese
butter
two large flour tortillas
optional-
ham or bacon
sliced capsicum
sour cream
fresh coriander
minced garlic
Method:
Heat your favourite pan, and add a bit of butter.
Saute the onion, and any other optional veggies such as garlic
or capsicum or ham. When soft, add the eggs and mix everything together.
Add an appropriate amount of cheese, and a good swath of
Cook until cheese is melted and serve on a warm flour tortilla. I just heat
them on the stove by hand, turning to avoid burning. Just takes a few
seconds. Add optional sour cream. Fold the bottom edge of the tortilla in,
then fold the two sides, one over the other.
You should have enough egg mix to make two nice sized burritos.
Any of the chilli sauces or salsas will work with this by the way, but I
usually grab the Green Jalapeno or the Red Cayenne.
