DANO ROBERT'S FLAMIN' FISH TACOS

This recipe takes me to a little beach south of Puerto Vallarta called Quimixto
 
a couple of fillets of a firm white fish
beer batter (self raising and beer) can be beer free,replace with soda water to make it light
raw red cabbage cut finely
fresh corriander(cilantro) in sprigs
light sour cream
byron bay chilli co chilli sauce with lemongrass
chopped jalapenos (optional)
flour tortillas
 
 
cut the fish into little finger size pieces,and deep fry in the beer batter.
steam or toast the tortillas(soft or crunchy)
pop a couple of pieces of fish on the hot tortilla
then add some cilantro sprigs and chopped raw cabbage
a little sour cream, jalapenos
and some byron bay chilli co chilli sauce.
roll her up and off you go!
great with an icy cold beer or two!
 
P.S. you can always pan fry or grill the fish with some creole seasoning,
then mash the cooked fish up to put in the tacos. cheers
