SUPER NACHOS

 

Delicious as a quick and easy main meal, snack or party platter!
 

BBCC CORNCHIPS
BBCC SALSA PICANTE, or SMOKY RED BEAN SALSA

Two cans of refried beans or equivalent cooked borlotti beans
500g cooked mince or chicken
250g bag of shredded tasty cheese
 
Garnishes:
Guacamole
Sour Cream
Sliced Olives
Sliced or diced capsicum
Chopped eschallots or red onion
Chopped fresh coriander
Chopped jalapeno peppers
Shredded lettuce
 
In a shallow baking dish, spread cooked beans or refried beans.
Top with cooked mince or chicken, grated cheese and drizzle with SALSA.
Bake at 200 for 20-25 minutes (don't let the cheese burn).
Remove from oven and top with garnishes of your choice.
Place rows of BBCC CORNCHIPS around the edges of the bean mixture and serve hot.
This recipe can also be adapted for individual servings on ovenproof plates or in the microwave.
