THREE EXOTIC BURGER RECIPES 

You may never eat another regular burger again!
 
SMOKIN’ MANGO BEEF BURGERS-
An Aussie tropical burger combining the distinctive flavours of mango and smoked jalapenos with fried onions and fresh chiles. Mind the drips…these are a bit messy but really good!   
 
2 pounds lean ground beef
2 fresh red or green jalapenos, minced
2 cloves garlic, minced
salt
Byron Bay SMOKIN’ MANGO CHILLI SAUCE with Chipotles
2 medium onions, sliced
vegetable oil
4 slices tasty cheese
4 of your favourite rolls, I like it with Turkish bread 
 
Lightly mix beef, chiles and garlic together.  Form into 4 patties and refrigerate until firm.  Heat oil to medium-high in a frying pan and sauté onion slices until just beginning to turn golden.  Set aside and keep warm  Sear patties on a hot grill or frying pan on both sides.  Lower heat and cook to desired degree of doneness, basting with chilli sauce on both sides in the last few minutes of cooking and salting to taste. Add sliced cheese to melt. To assemble burgers, halve rolls and spread with mayonnaise. Top with patties, cooked onions and drizzle generously with additional chilli sauce.

FIERY COCONUT CHICKEN BURGERS-
 
The Asian influence of curry and ginger, coconut, chile and mint give these burgers
a refreshingly light and tangy flavour. Ground turkey can be substituted for chicken.
 
2 pounds ground chicken
4 sliced green onions (both white and green parts)
1 teaspoon grated ginger
Byron Bay FIERY COCONUT CHILLI SAUCE with Curry & Ginger
salt
1 cup plain thick yogurt
1 tablespoon finely chopped mint
1 tablespoon chopped cilantro
thinly sliced cucumber
baby Asian greens
4 of your favourite rolls, I like it with Turkish bread 
Lightly mix chicken with green onions and ginger.  Form into 4 patties and refrigerate until firm. Add mint and cilantro to yogurt and set aside. Sear patties on a hot grill or frying pan on both sides.  Lower heat and cook to desired degree of doneness, basting with chilli sauce on both sides in the last few minutes of cooking and salting to taste.  To assemble burgers, halve rolls and spread with yogurt mixture.  Top with patties, cucumber slices, greens and a generous drizzle of chilli sauce.

GRILLED FISH BURGERS with SPICY SWEET CHILLI SAUCE-
 
The tang of lemongrass and lime with a touch of spice make these burgers absolutely delicious!   
 
4 thick boneless fish fillets
vegetable oil
Byron Bay SPICY SWEET CHILLI SAUCE with Lemongrass
salt
½ cup mayonnaise (the egg kind, not the sweet)
½ cup sour cream
1 lime, grated
sliced red onion
rocket
4 crusty French rolls, or whatever kinda bun you like
 
Mix mayonnaise with yogurt and grated lime.   Brush the fish fillets lightly with oil
and grill on the BBQ or under the broiler.
Baste just before done with chilli sauce on both sides.  Squeeze lime juice over
fillets and salt to taste.  To assemble burgers, halve rolls and spread with mayonnaise mixture. Top with fish, onion slices, rocket and a generous drizzle of
chilli sauce.
