Ingredients

POTATO SALAD
1kg small red potatoes
½ cup plain thick yogurt
½ cup mayonnaise
2-4 tablespoons BYRON BAY CHILLI COMPANY HEAVENLY HABANERO CHILLI 

SAUCE
¼ cup chopped coriander
1 clove garlic, minced
½ cup sliced spring onions
Combination of red, green and yellow capsicum, finely chopped
1 red cayenne chilli, thinly sliced (optional)
salt & pepper

Cooking Instructions

Steam whole potatoes until just tender. Set aside to cool. 

In a processor, combine yogurt, mayo, chilli sauce, coriander and garlic. Blend well. 

Cube the cooled potatoes and add the yogurt dressing and vegetables. 

Gently mix and season with salt and pepper.
