Asian Salad with Mint & Coriander

Ingredients
- 3 cups finely shredded cabbage
- 1 cup roughly chopped coriander
- 1 cup torn mint leaves
- 1 small red onion, halved and thinly sliced
- 1 red capsicum, finely sliced in short strips
- 1 large carrot, shredded
- 2 red chillis, finely sliced (optional)
- 1/3 cup sunflower oil
- 1/3 cup rice wine vinegar
- 1/3 cup Byron Bay Chilli Co Fiery Coconut Chilli Sauce
Directions
- Combine cabbage, coriander, mint, onion, capsicum and chillis in a medium sized bowl
- In a small bowl, combine yogurt, chilli sauce and lime juice
- Pour over salad and gently mix
- Serve within 30 minutes
