Asian Salad with Mint & Coriander

Ingredients

  • 3 cups finely shredded cabbage
  • 1 cup roughly chopped coriander
  • 1 cup torn mint leaves
  • 1 small red onion, halved and thinly sliced
  • 1 red capsicum, finely sliced in short strips
  • 1 large carrot, shredded
  • 2 red chillis, finely sliced (optional)
  • 1/3 cup sunflower oil
  • 1/3 cup rice wine vinegar
  • 1/3 cup Byron Bay Chilli Co Fiery Coconut Chilli Sauce

Directions

  1. Combine cabbage, coriander, mint, onion, capsicum and chillis in a medium sized bowl
  2. In a small bowl, combine yogurt, chilli sauce and lime juice
  3. Pour over salad and gently mix
  4. Serve within 30 minutes
